Treehugging

My mate Sophie is a wonderful wonderful cook who often proclaims to not be creative yet on a daily basis turns fantastic ideas into deliciousness.  Last summer she sent me this recipe you must try but be warned - there won't be any left overs for lunch.  




SALAD
1 full head of broccoli - finely chopped
1 zucchini - grated
3 stalks celery - diced
3 spring onions - finely chopped 
Handful of snow or sugar snap peas - chopped finely


Optional - avocado, mushrooms, cherry tomatoes, quinoa, can of good quality tuna


DRESSING
1 tbsp sesame oil
.5 tbsp olive oil
1 tbsp tamari
1-2 cloves crushed fresh garlic
1 tbsp fresh minced ginger
.5 cup of white wine vinegar
2 teaspoons raw sugar


Method
Put all ingredients into a bowl and toss with dressing


Just try not to drink the dressing after a few wines....it's very tempting as there's nothing quite like it.
