Biscuit
180g butter, softened1 tsp vanilla extract
1/2 cup firmly packed brown sugar
1 egg
1.25 cups self-raising flour
.75 cup plain flour
.25 tsp bi carb soda
2/3 cup desiccated coconut
1/3 cup raspberry jam
Vienna cream
60g butter
.5 tsp vanilla extract
.75 cup icing sugar
2 tsp milk
1. preheat oven to 180. Grease oven trays, line with paper.
2. beat butter, extract and sugar until just combined; beat in egg. Stir in flours, soda and coconut, in two batches.
3. Roll two level teaspoons of mixture into ovals; place on trays about 5cm from ea other, flatten slightly with back of a fork.
4. Bake biscuits for about 7mins.
5. Make Vienna cream
6. Transfer biscuits to a wire rack to cool. Sandwich biscuits with cream and jam.
Perhaps Charlene should whip up some of these wonderful treats to brighten her life right now and detract from her naughty new husband.
