a serious chocolate cake for Al
3 cups (660g) caster sugar
250g butter, chopped
2 cups (500ml) water
1/3 cup (35g) cocoa powder
1 teaspoon bicarb soda
3 cups (450g) self-raising flour
4 eggs
Preheat your oven to 160C fan forced, grease 2 heart shaped baking tins, spray and line with paper. Stir sugar, butter, the water and sifted cocoa and soda in medium saucepan over heat, without boiling, until sugar dissolves; bring to the boil. Reduce heat;simmer,uncovered,5 mins. Transfer mixture to a large bowl;cool to room temperature. Add flour and eggs to bowl;beat with electric mixer until mixture is smooth and pale then transfer into each tin and fill halfway. Bake for approx. 25mins. Once cooked and cool, turn out onto a wire rack and smooth over your bottom layer with jam and whipped cream and add heart shaped top layer. Ice the top of your cake with chocolate icing or just leave it.
I used left overs to make cupcakes because I felt guilty. But Al said he'd eat the large cake so we both don't feel bad. I wonder if Stacy Q's mum baked her chocolate cakes?
